I was going to eat a tuna steak from the freezer a couple of months ago. Its use by date was January but this was in June. I kept putting it off because it had a black blob on it which looked like a bacteria colony spreading through the veiny vallies in the meat. In the end I thought I would be brave and cook it. The black blob turned out to be a bit of garnish.  :embarassed:

I made some stuffed peppers tonight.

(makes 6 peppers)
1 lb ground pork
1 cup cooked rice
1/3 cup parmesan cheese
1/3 large sweet onion, diced
1/3 cup mushrooms, diced
1/4 cup white wine (used a fume blanc tonight, turned out excellent)
2 yellow bell peppers
2 orange bell peppers
2 red bell peppers

Chop 1/3 or 1/4 of the peppers off so that they can be stuffed and so that part of it can be used in the stuffing.
Cook wine, onion, pork and a spoonful of chopped garlic in a large pan. Once the pork is cooked add the chopped peppers and mushrooms.
Season how you like.  I used a bit of Anise seed and ground fennel along with ground black pepper and a single Habenero pepper from my garden. 
Once the peppers and mushrooms are steamed a bit, add the rice and cheese.
Stuff the peppers and put into an oven for 30 minutes at 350, with some more of the wine in the pan for moisture.

Delicious.
