I have a PS3 box variant for the 80GB model. The box is almost identical to this RFG entry:

The UPC is different, as are the featured games on the back of the box. Is this worth making a variant for? If so, what would it be called?

Same thing with the PS2 system box, my box has different UPC and featured games on the back.

What variation title should I give them if the only thing different is the UPC and the featured games on the back?

And another topic, should the Apple Macintosh category have all the Mac models listed as hardware or is this beyond the scope of the RFG? I noticed the Apple II/III category was populated with machines.

Modern Macintosh/PC hardware is beyond the scope of RFGeneration IMO, but I don't think we've ever discussed that.
