Here are some I can think of. There's probably a billion more though. Not to mention how very subjective a list like this is. One person might find something unmissable while another might not even consider it worth buying. I'll try to stay objective and not list games that are my personal favorites. ;)
(I'm not listing those already in your post)

Dreamcast
Shenmue
Rez (or on PS2)

Game Boy
Tetris
Pokémon (any version will do, but you have to have one )

GameCube
Super Mario Sunshine
Resident Evil 4 (or on PS2)

N64
The Legend of Zelda: Ocarina of Time
Goldeneye 007

NES
Super Mario Bros. 3

SNES
Super Mario World
Mario Paint
Final Fantasy 6 (called Final Fantasy 3 in NA)
Street Fighter II

Playstation
Final Fantasy 7
Gran Turismo
Crash Bandicoot

PS2
Grand Theft Auto 3
Rez (or on Dreamcast)
Resident Evil 4 (or on GameCube)

Genesis / Mega Drive
Sonic The Hedgehog 1 & 2

Atari 2600
Combat

Here's a list of the best selling video games on most major platforms: Best selling video games (http://en.wikipedia.org/wiki/Best_selling_video_games). If you're serious about collecting for a platform then you need to have all of these listed, eventually.

I think that was the reason behind asking for 1 suggestion per person hoping to get a decent number of unique titles.
Also as Tan pointed out there are already similar threads ;)

Oh, oops, I didn't read the part about only listing one game per console. :-/

@modest: If you only want to add one of my list for each console, you can choose yourself. :)

I'm sure it's just a typo, but that's a PS2 game. :)

EDIT: I'm only saying so, in case modest doesn't know.
