From what I've seen, Trebek was insistent on being the host until he was no longer able to do so, and apparently he felt like looking for a successor, even with his pancreatic cancer, would jinx things. The final Trebek episode will, fittingly, be on Christmas which I think will be a nice final touch. I heard rumors of Ken Jennings filling the spot.
